  • 28 ounces Canned Tomatoes Crushed tomatoes are recommended for smoother texture.
  • 4 cups Beef Broth Vegetable broth works for a lighter dish.
For the Noodles
  • 8 ounces Lasagna Noodles Broken into smaller pieces; can use gluten-free pasta.
For the Creaminess
  • 15 ounces Ricotta Cheese Can be replaced with cream cheese.
  • 2 cups Mozzarella Cheese Shredded; try provolone for variety.

  • 1 tablespoon Italian Seasoning Fresh herbs like basil or oregano can be substituted.

Equipment

  • Crock Pot
  • Skillet

Method

Step-by-Step Instructions
  1. In a large skillet over medium heat, brown the ground beef until fully cooked, about 7-10 minutes. Drain excess fat and transfer to the Crock Pot.
  2. Layer in your slow cooker: crushed canned tomatoes, beef broth, broken lasagna noodles, ricotta cheese, shredded mozzarella, and Italian seasoning. Stir gently to combine.
  3. Cover the slow cooker and set it to low for 4-6 hours or high for 2-3 hours.
  4. About 30 minutes before serving, add the broken lasagna noodles to the soup mixture.
  5. Once cooking is complete, stir the soup gently and serve, garnishing with extra mozzarella cheese or fresh herbs if desired.
