Step-by-Step Instructions for Crockpot Bruschetta Chicken
  1. Begin by spraying your crockpot or slow cooker with non-stick spray to prevent sticking.
  2. Add the diced small red onion and minced garlic to the bottom of the crockpot.
  3. Carefully place the boneless skinless chicken thighs on top of the onion and garlic mixture.
  4. Drizzle the chicken with extra virgin olive oil and balsamic vinegar.
  5. Cover the crockpot with its lid and set it to cook on low for 6-8 hours or high for 4 hours.
  6. In the last 30 minutes of cooking, sprinkle the mozzarella cheese and Parmesan cheese over the top of the chicken.
