Step-by-Step Instructions
  1. Cut the chicken into bite-sized pieces and place it in the bottom of your crockpot.
  2. Pour in the coconut milk and chicken broth over the chicken.
  3. Sprinkle in the curry powder, minced garlic, and ginger. Stir to combine.
  4. Layer the onion, red bell pepper, and carrots on top of the mixture without stirring.
  5. Drizzle lime juice, add fish sauce, brown sugar, and season with salt and pepper. Incorporate gently.
  6. Cover and set crockpot to low for 6-8 hours or high for 3-4 hours.
  7. Stir in the frozen peas 30 minutes before serving.
  8. Taste and adjust seasoning as needed. Serve over jasmine rice and garnish with cilantro if desired.
