  • 2 cups Cucumbers Use Persian or English cucumbers
  • 2 cups Tomatoes Any ripe variety, halve cherry tomatoes
For the Dressing
  • 3 tablespoons Red Wine Vinegar Can substitute with cider or distilled white vinegar
  • 2 tablespoons Olive Oil Extra virgin recommended

Method
 

Preparation
  1. Wash cucumbers and tomatoes thoroughly. Slice cucumbers into bite-sized pieces and cut tomatoes as desired.
  2. In a small bowl, combine olive oil and red wine vinegar. Whisk until emulsified and season with salt and pepper.
  3. Pour dressing over chopped cucumbers and tomatoes. Toss gently to coat all ingredients.
  4. Cover salad and let sit at room temperature for 20 minutes to meld flavors.
  5. Toss again before serving and transfer to a serving bowl.
