Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Thinly slice your Yukon Gold potatoes using a sharp knife or mandoline.
  3. In a medium saucepan over medium heat, melt 4 tablespoons of butter. Add 1/4 cup of all-purpose flour and whisk to form a smooth paste.
  4. Gradually pour in 2 cups of milk while whisking. Cook and stir for 5-7 minutes until thickened. Stir in 1 cup of shredded sharp cheddar and 1 cup of Gruyère until melted.
  5. In a greased 9x13 inch baking dish, layer half of the sliced potatoes, then pour half of the cheese sauce over them.
  6. Repeat with remaining potatoes and sauce.
  7. Sprinkle 1 cup of breadcrumbs over the top.
  8. Cover with foil and bake for 45 minutes.
  9. Remove foil and bake for an additional 15-20 minutes until golden brown and bubbly.
  10. Remove from oven and let it rest for 10 minutes before serving.
