- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together 1 cup of unsalted butter, 1 cup of granulated sugar, and ½ cup of brown sugar.
- Add 2 large eggs one at a time and mix in 2 teaspoons of vanilla extract.
- In a separate bowl, whisk together 2½ cups of flour, 1 teaspoon of baking soda, and ½ teaspoon of salt.
- Fold in 1 cup of chopped pistachios and 1¼ cups of white chocolate chips into the dough.
- Scoop portions of dough onto baking sheets about 2 inches apart.
- Bake for 10–12 minutes until edges are golden brown and centers are soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- Drizzle 1½ cups of melted white chocolate over cooled cookies and sprinkle with ½ cup of chopped pistachios.
