Ingredients
  

For the Meat Sauce
  • 2 tablespoons olive oil Substitute with canola or vegetable oil if needed.
  • 1 pound ground turkey Can substitute with ground beef or chicken.
  • 1 link Italian sweet sausage Can omit for vegetarian version.
  • 1 medium yellow onion Can substitute with shallots.
  • 2 cloves garlic Use garlic powder if fresh is unavailable.
  • 28 ounces marinara sauce Homemade or store-bought.
  • 2 teaspoons dried oregano Replace with Italian seasoning if preferred.
For the Cheese Mixture
  • 15 ounces ricotta cheese Cottage cheese can be used as a lower-fat alternative.
  • 1 large egg Can omit for a dairy-free option.
  • 1/2 cup Parmesan cheese Optional to substitute with nutritional yeast.
  • 1/4 cup Italian parsley Substitute with basil or omit.
For the Noodles and Topping
  • 9 sheets lasagna noodles Any pasta shape can be used.
  • 8 ounces fresh mozzarella Substitute with shredded mozzarella.
  • to taste salt Essential seasoning.
  • to taste pepper Essential seasoning.

Method
 

Cooking Steps
  1. In a large skillet or Dutch oven, heat a drizzle of olive oil over medium-high heat. Add in the ground turkey and Italian sweet sausage, cooking until browned, stirring frequently for about 5-7 minutes. Toss in the diced yellow onion and minced garlic, continuing to sauté until the onion turns translucent, around another 3-4 minutes.
  2. Mix in the marinara sauce and sprinkle in the dried oregano, stirring well to combine all ingredients. Lower the heat, cover, and let simmer for 15 minutes.
  3. In a large pot, bring salted water to a boil and break the lasagna noodles into smaller pieces. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
  4. In a medium bowl, combine ricotta cheese, grated Parmesan, a beaten egg, and chopped Italian parsley. Season with salt and pepper.
  5. Preheat your oven to 375°F (190°C). In the skillet with meat sauce, toss in the cooked noodles. Dollop the cheese mixture over the top, then sprinkle fresh mozzarella on top.
  6. Bake uncovered for 10-15 minutes until the cheese is melted and bubbly.
  7. Let sit for a few minutes before serving. Garnish with chopped parsley or additional Parmesan.
