- Begin by bringing a large pot of water to a boil over high heat. Add udon noodles and cook according to package instructions, usually about 5–7 minutes, until al dente. Once done, drain the noodles in a colander and transfer them to a large serving bowl, allowing them to cool slightly.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, Sriracha, grated ginger, and garlic until well combined and smooth. Add the crunchy peanut butter and continue whisking until the dressing is creamy and fully incorporated. Taste and adjust seasonings if desired.
- Pour the prepared peanut dressing over the warm noodles in the bowl. Allow the noodles to cool to room temperature for about 10 minutes.
- While the noodles are cooling, prepare your fresh vegetables. Thinly slice the red cabbage, julienne the carrot, and slice the red bell pepper into strips. Chop the green onions and roughly chop the cilantro.
- Once the noodles have cooled, add the prepared vegetables, chopped cilantro, and peanuts to the bowl. Gently toss everything together until the ingredients are well combined.
