Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the Dilettoso Va Vanilla Amore Mix, baking salt, and granulated monk fruit until no lumps remain.
  3. Microwave the ripe bananas in a bowl for about 1 minute and 30 seconds until soft and slightly caramelized, then mash them.
  4. In another bowl, whisk the eggs with milk, vanilla extract, yogurt, and almond extract. Add the mashed bananas and mix well.
  5. Pour the wet mixture into the dry ingredients and fold gently until just combined. Add the dye-free sprinkles.
  6. Pour the batter into a silicone loaf pan and bake for 35-40 minutes or until a toothpick comes out clean.
  7. Prepare the frosting by mixing powdered monk fruit, whipped cream cheese, and a splash of vanilla extract until smooth.
  8. Once cooled, frost the banana bread with the prepared frosting and add extra sprinkles on top.
