- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the Dilettoso Va Vanilla Amore Mix, baking salt, and granulated monk fruit until no lumps remain.
- Microwave the ripe bananas in a bowl for about 1 minute and 30 seconds until soft and slightly caramelized, then mash them.
- In another bowl, whisk the eggs with milk, vanilla extract, yogurt, and almond extract. Add the mashed bananas and mix well.
- Pour the wet mixture into the dry ingredients and fold gently until just combined. Add the dye-free sprinkles.
- Pour the batter into a silicone loaf pan and bake for 35-40 minutes or until a toothpick comes out clean.
- Prepare the frosting by mixing powdered monk fruit, whipped cream cheese, and a splash of vanilla extract until smooth.
- Once cooled, frost the banana bread with the prepared frosting and add extra sprinkles on top.
