  • 1/2 cup Vegetable broth or water Adds moisture
  • 2 pieces Limes Juiced

For the Avocado Crema
  • 1 large Avocado Ripe
  • 1 medium Jalapeño Adjusted for spice preference
  • 1/4 cup Cilantro Optional
  • 1/2 cup Sour cream or yogurt Use non-dairy for vegan option
  • as needed Water To adjust consistency

Method
 

Preparation Steps
  1. In a food processor, combine the avocado, lime juice, garlic, cilantro, and sour cream. Blend until smooth, adding water to adjust consistency.
  2. Preheat grill or broiler. Grill corn for 8-10 minutes until charred. Cool and slice kernels off the cob.
  3. Heat olive oil in a skillet. Sauté onion for 4-5 minutes, then add garlic and cook for another minute. Stir in spices.
  4. Add black beans and broth to the skillet. Simmer for 5 minutes, mashing some beans for texture, then add lime juice and season.
  5. On each tostada, layer black bean filling, charred corn, and drizzle with avocado crema. Top with cilantro if desired.
