Ingredients
  

For the Base
  • 3 tbsp Salted Butter Substitute with olive oil for dairy-free
  • 8 large Large Eggs No substitute recommended
  • 2 cups Whole Milk Replace with almond milk or oat milk for dairy-free
  • 2 tbsp Dijon Mustard Yellow mustard is a decent substitute
  • 1 tsp Kosher Salt Adjust according to taste
  • 1 tsp Black Pepper Adjust according to taste
For the Protein and Veggies
  • 1 lb Breakfast Sausage Swap for turkey or chicken sausage for a leaner option
  • 8 oz Mushrooms Cremini or button mushrooms are fantastic choices
  • 4 cups Baby Spinach Substitute with kale or Swiss chard
For the Topping
  • 4 cups Fresh Bread Cubes Gluten-free bread can be used for gluten-free option
  • 2 tbsp Olive Oil Can be omitted if using butter
  • 2 cups Shredded Sharp Cheddar Cheese Mozzarella or dairy-free cheese can be used
  • 2 tbsp Fresh Parsley Optional but lovely for garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9 x 13-inch baking dish with salted butter.
  2. Sauté the breakfast sausage in a skillet over medium heat until browned and fully cooked, about 5–7 minutes. Set aside to cool.
  3. In the same skillet, sauté the mushrooms until golden for about 4–5 minutes, then add spinach until just wilted, about 1–2 minutes.
  4. In a mixing bowl, whisk together eggs, whole milk, Dijon mustard, kosher salt, and black pepper until well combined.
  5. Fold in the cooked sausage, sautéed mushrooms, wilted spinach, and 1.5 cups of shredded cheese until evenly mixed.
  6. Pour the egg mixture into the greased baking dish and spread evenly across the bottom.
  7. In a separate bowl, toss the bread cubes with olive oil, kosher salt, and black pepper, then layer over the egg mixture.
  8. Sprinkle remaining shredded cheddar cheese on top and bake in the oven for 35–40 minutes, until the center is set and croutons are golden brown.
  9. Let cool for 5 minutes before slicing and serving warm to enjoy.
