  • 1 tbsp Fresh Ginger Finely grated

Step-by-Step Instructions
  1. Soak the Medjool dates in warm water for about 5-10 minutes until they soften. Drain but reserve a bit of the soaking water.
  2. In a food processor, combine the softened dates, rolled oats, walnuts, finely grated carrot, chia seeds, fresh ginger, and vanilla extract. Blend until dough-like.
  3. Scoop out equal portions and roll them into bite-sized balls, about one inch in diameter.
  4. If using, roll each ball in shredded coconut to coat them lightly. Place on a lined baking sheet.
  5. Refrigerate for about 15 minutes to let the energy balls firm up.
