Marinate Chicken
- Combine olive oil, lime juice, minced garlic, chipotle chili powder, smoked paprika, cumin, salt, and black pepper to create a marinade. Add chicken, ensuring it's coated. Cover and marinate for at least 30 minutes.
Cook Chicken
- Heat a grill or skillet over medium-high heat. Cook marinated chicken for 6-7 minutes per side until browned and internal temperature reaches 165°F. Remove from heat, cover with foil, and let rest for 5 minutes.
Prepare Beans & Corn
- Warm black beans in a saucepan with cumin and salt for about 5 minutes. In another pan, heat corn for 3-4 minutes.
Make Creamy Sauce
- Whisk together sour cream or Greek yogurt, additional lime juice, minced chipotle peppers, garlic powder, and honey until smooth and combined. Adjust seasoning.
Assemble Bowl
- Layer black beans and corn at the bottom of a serving bowl. Top with sliced chicken, avocado, and drizzle creamy sauce. Garnish with cilantro and lime.
