Step-by-Step Instructions
  1. Cook the Noodles: Bring a pot of water to boil, add the noodles, and cook according to package instructions (3–5 minutes). Reserve 1/4 cup pasta water before draining. Rinse under cold water.
  2. Make the Sauce: In a large mixing bowl, combine tahini, soy sauce, lime juice, rice vinegar, sweet chili sauce, sesame oil, and ginger. Whisk until smooth, then slowly add reserved pasta water until the sauce is drippable.
  3. Prep Vegetables: Wash and chop the vegetables, slicing carrots and cucumbers, and chopping green onions and cilantro to create a colorful mix.
  4. Combine: Add cooled noodles to the sauce and toss gently to coat evenly.
  5. Serve and Garnish: Plate the noodles, top with vegetables and sesame seeds, and drizzle with chili oil if desired.
