Step-by-Step Instructions for Dandelion Jelly
- Begin by collecting fresh dandelion petals, ensuring you only use the vibrant yellow blooms. Rinse the petals thoroughly.
- In a large saucepan, add your cleaned dandelion petals along with 4 cups of water. Bring to a gentle boil, then simmer for 10 minutes.
- Strain the liquid through a fine mesh sieve into a bowl, discarding the solids and resulting in about 4 cups of dandelion juice.
- Return the juice to the saucepan, stir in pectin and optional butter, and bring to a vigorous rolling boil.
- Quickly stir in sugar and lemon juice, boiling for another 1-2 minutes until it starts to thicken.
- Remove from heat, skim off foam, and pour into sterilized jars, sealing tightly while hot.
- Let jars cool at room temperature until set. Check seals by pressing the lids.
