- Harvest about 4 cups of fresh, organic dandelion flowers and rinse them under cool running water.
- In a large pot, boil 4 cups of water and add the dandelion flowers, steeping for 15-20 minutes.
- Strain the mixture to obtain about 3 cups of dandelion infusion.
- Return the infusion to the pot, add 4 cups of sugar, 1/4 cup of lemon juice, and pectin, stirring until dissolved.
- Bring the mixture to a rolling boil for 1-2 minutes, stirring continuously.
- Pour the hot jelly into sterilized jars, leaving 1/4 inch of headspace, and process in a boiling water bath for 10 minutes.
