Granola Base
  • 2 cups Granola Homemade or store-bought
  • 1/4 cup Melted Coconut Oil Melted butter can be substituted
  • 1/4 cup Pure Maple Syrup Can substitute with honey
Yogurt Filling
  • 1 cup Greek Yogurt Try Honey Vanilla Greek Gods for extra flavor
  • 1/2 cup Dark Chocolate Chips Cacao or carob chips are healthier options
  • 1/2 cup Shredded Coconut Using unsweetened coconut is ideal
Garnish
  • 1/4 cup Extra Chips and Coconut Optional toppings

Method
 

Preparation Steps
  1. Line a standard cupcake tin with 12 cupcake liners.
  2. In a large mixing bowl, combine granola, melted coconut oil, and pure maple syrup. Stir until sticky and well-coated.
  3. Spoon the granola mixture into each cupcake liner, filling them halfway and pressing down firmly.
  4. In another bowl, combine Greek yogurt, shredded coconut, and dark chocolate chips. Mix until evenly distributed.
  5. Spoon the yogurt mixture into each granola-filled cupcake liner, filling to the rim. Add extra dark chocolate chips and coconut on top if desired.
  6. Place the filled cupcake tin in the freezer for approximately 2 hours or until solid.
  7. Once frozen, transfer the cups to an airtight container for storage.
