  • 4 Plums, sliced Ripe and firm

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Combine graham cracker crumbs, melted salted butter, and sugar until the mixture resembles wet sand. Press into a 9-inch springform pan. Bake for 8 minutes and cool.
  3. In a stand mixer, beat cream cheese and ricotta until smooth. Gradually add sugar, then eggs, lemon juice, vanilla, cornstarch, flour, and sour cream until combined.
  4. Pour the filling over the cooled crust. Arrange sliced plums on top and sprinkle with cinnamon.
  5. Bake for approximately 1 hour. Turn off the oven and let it sit inside for an additional hour.
  6. Cool at room temperature for 1 hour, then refrigerate for several hours or overnight before serving.
