Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together the olive oil, soy sauce, balsamic vinegar, Worcestershire sauce, and minced garlic until well blended. Add Dijon mustard, honey (or maple syrup), thyme, rosemary, and smoked paprika. Season with salt and pepper to taste.
  2. Clean the mushrooms and place them in a resealable bag or shallow dish. Pour the marinade over the mushrooms, ensuring they are evenly coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, preferably 2-3 hours.
  3. Soak wooden skewers in water for at least 30 minutes to prevent burning. Drain and set aside.
  4. Preheat your grill to medium-high heat, around 400°F. Lightly oil the grates.
  5. Remove the marinated mushrooms and thread them onto the soaked skewers, alternating with optional vegetables if desired.
  6. Grill skewers for about 10-12 minutes, turning occasionally. Brush with leftover marinade during cooking for extra flavor.
  7. Transfer grilled skewers to a platter and garnish with fresh herbs. Serve warm.
