Method
 

Step-by-Step Instructions
  1. Heat the Oil: Begin by heating 1 tablespoon of olive oil in a large sauté pan over medium-high heat for about 3 minutes until it shimmers.
  2. Cook the Chicken: Season the chicken breasts with salt and pepper, then add to the hot pan and cook for 10 minutes, flipping halfway through.
  3. Boil the Orzo: While the chicken cooks, bring a pot of salted water to a boil, add orzo, and cook according to package instructions (8-10 minutes). Drain and set aside.
  4. Sauté Garlic: Remove chicken, reduce heat, add another tablespoon of olive oil and minced garlic, sauté for 1 minute.
  5. Add Tomatoes and Wine: Add grape tomatoes and white wine to pan, cook for 5 minutes until tomatoes start to soften.
  6. Combine Ingredients: Stir in orzo, olives, spinach, herbs, black pepper, and oregano, mix thoroughly for 2-3 minutes.
  7. Slice and Serve: Slice the chicken and place on top of the orzo mixture, crumble feta over dish, serve warm.
