- In a saucepan over medium heat, combine equal parts granulated sugar and water with fresh mint leaves. Stir gently and let simmer for about 5 minutes until the sugar dissolves. Strain the syrup into a heat-proof jar and allow to cool.
- In a blender, combine the cooled mint syrup, bourbon, and crushed ice. Blend on high until smooth and slushy, adding more ice if needed.
- Pour the Mint Julep Slushie into chilled glasses and garnish with fresh mint sprigs.
