  • 1 tablespoon Olive Oil Feel free to substitute with any vegetable oil.
  • 1 medium Onion Switch with shallots for a milder taste.
  • 2 cloves Garlic Fresh is preferable, but garlic powder can be used.
  • 2 pounds Ground Chicken Turkey can be a fitting alternative.
  • 1 cup Seasoned Breadcrumbs Plain breadcrumbs with Italian seasoning work well too.
  • 1/2 cup Milk Any non-dairy milk can be used.
  • 1 cup Parmesan Cheese Pecan or nutritional yeast are vegan choices.
  • 1 large Egg Use flaxseed meal mixed with water for a vegan alternative.
  • 1/4 cup Fresh Parsley Dried parsley works as a suitable replacement.
  • 1 teaspoon Italian Seasoning You can create your homemade mix.
  • 1 teaspoon Salt Adjust according to your dietary preferences.
  • 1 cup Mozzarella Cheese Strings Shredded mozzarella can also be used.
  • 1 cup Marinara Sauce Choose store-bought or homemade.
  • 1/2 cup Panko Breadcrumbs Regular breadcrumbs can be used but will be less crunchy.
  • 2 tablespoons Butter Olive oil works as a dairy-free substitute.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F). Line a baking sheet with aluminum foil and lightly coat it with cooking spray.
  2. In a skillet, heat a drizzle of olive oil over medium heat. Add the finely diced onion and minced garlic, cooking until translucent, about 3–5 minutes.
  3. In a large mixing bowl, combine the ground chicken, cooled onion and garlic, seasoned breadcrumbs, milk, Parmesan cheese, egg, chopped parsley, Italian seasoning, and salt. Mix gently until just combined.
  4. Form two-thirds of the meat mixture into a rectangular shape on the baking sheet. Create a well in the center and add the mozzarella cheese strings. Mold the remaining mixture over the cheese to seal.
  5. Spread marinara sauce over the top of the meatloaf for flavor and moisture.
  6. Bake the meatloaf for 45 minutes until edges are crispy and the center is firm.
  7. Combine panko breadcrumbs, Parmesan cheese, melted butter, and parsley in a bowl to create a topping.
  8. After 45 minutes, sprinkle the breadcrumb mixture on top and return to the oven for an additional 15–20 minutes until golden brown.
  9. Let the meatloaf rest for 10 minutes before slicing to allow juices to redistribute.
