Ingredients
  

For the Sausage & Veggies
  • 1 pound Italian Sausage Can swap for chicken or veggie sausage.
  • 2 pieces Bell Peppers Any color
  • 1 piece Red Onion Can use yellow or white onion.
  • 2 cups Broccoli Florets Fresh or frozen, adjust cooking times if using frozen.
  • 1 piece Zucchini Slice evenly.
  • 2 cups Baby Potatoes Can substitute with russet or sweet potatoes.
  • 3 tablespoons Olive Oil Extra virgin recommended.
  • 1 teaspoon Garlic Powder Fresh garlic can be substituted.
  • 1 teaspoon Onion Powder Omit if using fresh onion.
  • 1 teaspoon Paprika Smoked paprika for richer flavor.
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Fresh Parsley Optional garnish.

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop your bell peppers, red onion, broccoli florets, zucchini, and baby potatoes into bite-sized pieces.
  3. Cut your Italian sausage into bite-sized pieces and add to the bowl with your chopped veggies.
  4. Drizzle olive oil over the mixture and sprinkle with garlic powder, onion powder, paprika, salt, and pepper. Toss to coat.
  5. Transfer the mixture onto a sheet pan in a single layer.
  6. Roast in the oven for 30–35 minutes, stirring halfway through.
  7. Garnish with fresh parsley, serve warm.
