- Preheat your oven to 400°F (200°C).
- Wash and chop your bell peppers, red onion, broccoli florets, zucchini, and baby potatoes into bite-sized pieces.
- Cut your Italian sausage into bite-sized pieces and add to the bowl with your chopped veggies.
- Drizzle olive oil over the mixture and sprinkle with garlic powder, onion powder, paprika, salt, and pepper. Toss to coat.
- Transfer the mixture onto a sheet pan in a single layer.
- Roast in the oven for 30–35 minutes, stirring halfway through.
- Garnish with fresh parsley, serve warm.
