Preparation Steps
  1. In a medium bowl or mason jar, add the thick-cut rolled oats, grated carrots, almond milk, almond butter, and flaxseed meal. Pour in pure maple syrup, vanilla extract, and sprinkle the ground spices and sea salt. Stir vigorously until well combined.
  2. Cover the bowl or jar tightly with plastic wrap or a lid. Place in the refrigerator to chill for at least 8 hours or overnight.
  3. When ready to enjoy, remove from the fridge. Eat cold or warm in the microwave for about 30 seconds to 1 minute.
  4. Top with grated carrots, a handful of dried raisins, and a drizzle of maple syrup. Add chopped nuts if desired.
  5. Store leftovers in an airtight container in the refrigerator for up to 5 days.
