- In a large mixing bowl, combine the strawberry cake mix, melted butter, and egg until smooth. Add the softened cream cheese and mix until thick and creamy. Cover and refrigerate for at least 1 hour.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Scoop tablespoon-sized balls of dough and optionally roll in sugar. Place on sheets 2 inches apart.
- Bake for 8–10 minutes. The edges should set while the centers remain soft. Let cool on the sheet for 1 to 2 minutes.
- Press a chocolate kiss into the center of each cookie while they are still warm, allowing it to melt slightly.
- Transfer cookies to a wire rack to cool completely.
