  • 1 cup Ripe Mango peeled and diced
  • 2 Kiwi peeled and diced
  • 1 cup Papaya peeled and diced
  • 1 medium Ripe Banana peeled and sliced
  • 1/2 cup Pomegranate Seeds
For the Dressing
  • 1 tbsp Orange Zest
  • 1/4 cup Orange Juice
  • 2 tbsp Lime Juice
  • 1 tbsp Fresh Mint Leaves chopped
  • 1 tbsp Honey optional
  • 1 pinch Salt

Method
 

Preparation
  1. Start by peeling and dicing the fresh pineapple, ripe mango, kiwi, papaya, and banana into uniform, bite-sized pieces.
  2. In a large mixing bowl, gently add all the diced fruits together.
  3. With clean hands or salad tongs, gently toss the fruit mixture to combine.
  4. Sprinkle in the pomegranate seeds, and stir gently to incorporate them.
  5. In a small bowl, whisk together the orange zest, orange juice, lime juice, chopped mint, honey, and a pinch of salt.
  6. Pour the fresh dressing over the mixed fruits and gently stir to coat.
  7. Transfer to a serving bowl and garnish with extra mint leaves.
  8. Serve immediately or refrigerate for up to an hour.
