Directions
- Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking dish by spraying it with cooking spray.
- Boil lasagna noodles according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until onion is soft.
- Add ground turkey to the skillet, breaking it apart with a spoon. Cook until browned, about 5 minutes.
- Stir in tomato sauce, tomato paste, oregano, basil, sugar, salt, black pepper, and red pepper flakes. Simmer for 5 minutes.
- In a separate bowl, combine ricotta cheese, eggs, and two-thirds of the mozzarella and Parmesan. Mix well.
- Layer in the baking dish: spread meat sauce on the bottom, add noodles, then half of the cheese mixture. Repeat layers and finish with sauce and remaining cheese.
- Cover with foil and bake for 30 minutes. Remove foil and broil on high for 5 minutes.
- Let the lasagna rest for 10 minutes before serving.
