Step‑by‑Step Instructions for Vegan Yule Log
  1. Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.
  2. In a large bowl, combine aquafaba and applesauce, mixing until smooth.
  3. Gradually add gluten-free flour blend and tapioca flour, then stir in maple syrup until a smooth batter forms.
  4. Pour the batter onto the lined baking tray and spread evenly to about ½ inch thickness.
  5. Bake for 12-15 minutes until set but still soft.
  6. Remove from oven and roll the warm cake with the parchment paper attached, then let cool completely.
  7. Melt the vegan white chocolate and mix with cacao butter until combined to create frosting.
  8. Once the cake has cooled, unroll it and spread frosting evenly inside, then roll back up tightly.
  9. Spread a generous layer of frosting over the entire outside of the log.
  10. Sprinkle desiccated coconut over the frosting and add cranberries and holly for decoration.
