Step-by-Step Instructions
  1. Finely chop 1 cup each of broccoli, carrots, and red bell pepper. Set aside.
  2. In a bowl, mix 4 oz softened cream cheese, ⅓ cup mayonnaise, ½ tsp garlic powder, ¼ tsp dried dill, ¼ tsp salt, and ⅛ tsp black pepper until creamy.
  3. Microwave 2 large flour tortillas for 15-20 seconds to soften.
  4. Spread cream cheese mixture on each tortilla, then sprinkle with chopped veggies, ½ cup cheddar cheese, and 2 tbsp green onion.
  5. Roll each tortilla tightly from one edge to the other. Use toothpicks if necessary.
  6. Place the rolled tortillas in the freezer for 20 minutes to firm them up.
