Step‑by‑Step Instructions for Veggie Cream Cheese Roll Ups
  1. Soften the cream cheese by leaving it at room temperature for about 30 minutes, or microwave for 10-15 seconds.
  2. Chop the mixed bell peppers and green onions, and grate the carrots to have around 1 cup of mixed vegetables.
  3. In a bowl, mix cream cheese, veggies, mayonnaise, garlic powder, salt, onion powder, cumin, and dill until smooth.
  4. Warm tortillas in a skillet for 1-2 minutes per side to make them pliable.
  5. Spread the veggie-cream cheese mixture evenly on each tortilla, leaving small borders.
  6. Roll the tortilla tightly from one end, tucking in the filling, and seal with a bit of the mixture.
  7. Wrap each roll tightly in cling wrap and refrigerate for at least 30 minutes to set.
  8. After chilling, slice each roll into 1-inch thick pinwheels and serve.
