- Start by zesting about 2 oranges. Combine the zest with sugar in a bowl, rubbing together until aromatic.
- In a large bowl, mix the orange juice, eggs, vanilla, and sugar-zest mixture. Add vegetable oil and beat until smooth.
- Sift flour, baking powder, baking soda, and salt into the wet mixture. Gently fold until just combined.
- Generously spray the bundt pan with baking spray or coat it with butter and flour. Set aside.
- Pour the batter into the prepared bundt pan and bake at 350°F for 50-60 minutes until a toothpick comes out clean.
- In a saucepan, combine orange peels, orange juice, water, and sugar. Simmer gently until sugar dissolves to make the syrup.
- Once the cake is baked, prick holes in the top and pour the syrup over it. Let it absorb and cool for 30 minutes.
