Preparation
  1. Preheat your oven to 325°F (163°C) and line a 9x13-inch baking pan with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar until it resembles wet sand. Press into the pan and bake for 10 minutes.
  3. In a large bowl, beat together cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla extract.
  4. Toss diced apples with cinnamon and nutmeg, then fold into the cream cheese mixture.
  5. Pour the cheesecake mixture over the baked crust. Bake for 30-35 minutes until slightly jiggly in the center.
  6. Allow to cool at room temperature for 1 hour, then drizzle with caramel sauce and refrigerate for at least 4 hours before serving.
