Method
 

Preparation
  1. In a small bowl, whisk together olive oil, balsamic vinegar, oregano, and basil. Season with salt and pepper. Set aside.
  2. Peel and thinly slice the cucumber, then dice it. Place in a large mixing bowl.
  3. Quarter the cherry tomatoes and add to the bowl with cucumber.
  4. Thinly slice the red onion and add to the bowl, folding it gently.
  5. Cut fresh mozzarella into bite-sized pieces and add to the salad.
  6. Drizzle the marinade over the salad and toss gently to combine.
  7. Let the salad sit for about 10 minutes at room temperature before serving.
