  • 1.75 cups Granulated Sugar
  • 3 oz Lime Jello
  • 2 large Eggs
  • 2.5 cups All-Purpose Flour
  • 1 tsp Baking Powder
  • 0.5 tsp Salt
  • 0.25 cup Granulated Sugar for rolling
For the Frosting
  • 1 oz Cream Cheese softened
  • 2 cups Powdered Sugar
  • 1-2 tbsp Milk adjust for consistency
  • 1 tbsp Lime Jello reserved

Method
 

Cookie Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper or a silicone mat.
  2. In a stand mixer, cream together the butter and sugar until light and fluffy, about 3-5 minutes.
  3. Incorporate the lime jello powder into the creamed mixture and mix until fully combined.
  4. Add the eggs one at a time, mixing well after each addition.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  7. Drop rounded balls of dough onto the baking sheet, roll in granulated sugar, and flatten slightly.
  8. Bake for 9-11 minutes until edges are set and centers are glossy. Cool for 5 minutes on the sheet before transferring to a wire rack.
Frosting Preparation
  1. In a mixing bowl, combine cream cheese, butter, powdered sugar, milk, and lime jello until smooth.
  2. Once cookies are cooled, frost generously or pipe for decoration.
