Cookie Preparation
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper or a silicone mat.
- In a stand mixer, cream together the butter and sugar until light and fluffy, about 3-5 minutes.
- Incorporate the lime jello powder into the creamed mixture and mix until fully combined.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients, mixing just until combined.
- Drop rounded balls of dough onto the baking sheet, roll in granulated sugar, and flatten slightly.
- Bake for 9-11 minutes until edges are set and centers are glossy. Cool for 5 minutes on the sheet before transferring to a wire rack.
Frosting Preparation
- In a mixing bowl, combine cream cheese, butter, powdered sugar, milk, and lime jello until smooth.
- Once cookies are cooled, frost generously or pipe for decoration.
