  1. Prep Watermelon: Select a ripe, seedless watermelon. Slice in half, remove rind, chop flesh into chunks.
  2. Blend Mixture: Blend watermelon chunks on high speed until smooth, about 1-2 minutes. Add pectin if using and blend for 30 more seconds.
  3. Strain: Strain blended watermelon through a fine sieve into a mixing bowl to remove seeds and pulp.
  4. Fill Molds: Pour watermelon puree into popsicle molds, filling them about three-quarters full.
  5. Freeze: Freeze for about 4 hours or until firm.
  6. Prep Kiwi: Blend peeled and chopped kiwi until smooth, about 1-2 minutes, and strain through a sieve.
  7. Finish Molding: Fill remaining space in popsicle molds with kiwi mixture.
  8. Final Freezing: Freeze for an additional 4 hours or until solid.
  9. Serve: Remove from molds by running warm water over them, then serve immediately.
