  • 2 cups Kale Spinach can be used as an alternative.
Optional Ingredients
  • 2 tablespoons Sherry or Red Wine Vinegar Adds a tangy kick.

Step-by-Step Instructions
  1. Prepare Your Vegetables: Wash and chop your vegetables into uniform pieces.
  2. Combine Ingredients in the Crockpot: Add the lentils, butternut squash, carrots, onion, and garlic to the crockpot.
  3. Set the Cooking Temperature: Cover the crockpot, and set it to cook on high for 6-7 hours or low for 8-9 hours.
  4. Blend for Creaminess (Optional): Remove one-third of the soup, blend until smooth, and stir back into the remaining soup.
  5. Add Kale and Olive Oil: With 15 minutes left, add kale and a drizzle of olive oil.
  6. Season and Serve: Taste and season with salt, pepper, and optional vinegar before serving.
