For the Mashed Potatoes
  • 4 large Russet Potatoes Peeled and chopped.
  • 1/2 cup Milk Use dairy-free alternatives if desired.
  • 1 cup Smoked Gouda Cheese Or any melty cheese.
  • 2 tablespoons Unsalted Butter Optional for dairy-free.
  • Salt Additional Salt and Pepper To taste.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper.
  3. Marinate the chicken thighs in the mixture for at least 15 minutes.
  4. In a pot, boil salted water and add chopped russet potatoes, cooking for 15-20 minutes.
  5. Drain the potatoes and return them to the pot, keeping them warm.
  6. Mash the potatoes with milk, unsalted butter, and smoked gouda cheese until creamy.
  7. Place marinated chicken thighs skin-side up in a baking dish and bake for 25-30 minutes.
  8. Serve the chicken alongside the smoked gouda mashed potatoes and drizzle with pan juices.
