- Heat 2 tablespoons of olive oil over medium heat in a large skillet. Add 2 minced garlic cloves and sauté for about 1 minute until fragrant.
- Incorporate 1 cup of roasted red peppers and stir gently. Cook for an additional 2-3 minutes.
- Transfer the mixture into a blender, add 1/2 cup of heavy cream, salt, and pepper. Blend until smooth.
- Return the blended sauce to the skillet. Gently place 4 cod fillets into the sauce, cover, and let simmer for 8-10 minutes.
- Once cooked, sprinkle a pinch of paprika over the dish and serve immediately.
