  • 50 grams Demerara Sugar brown sugar or coconut sugar can be used
  • 50 grams Flaked Almonds chopped walnuts or pecans can be substituted

  • 2 tablespoons Icing Sugar optional for dusting

Step-by-Step Instructions for Easy Rhubarb Crumble Slice
  1. Preheat your oven to 180°C (Gas Mark 4) and grease and line a 10x10 or 8x10 inch tin with greaseproof paper.
  2. Chop the rhubarb and cook in a saucepan with the red fruit jam over low heat for 8-10 minutes until softened.
  3. If using homemade pastry, roll it out thinly and press into the prepared tin.
  4. Mix flour and butter by rubbing together until crumbly, then add sugar, oats, and almonds.
  5. Spread the cooled rhubarb mixture over the pastry base, then sprinkle the crumble topping evenly over it.
  6. Bake for approximately 40 minutes until the top is golden brown.
  7. Let it cool in the tin for 10-15 minutes before lifting it out to serve.
