Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish with olive oil.
  2. In a medium bowl, combine the cumin, chili powder, garlic powder, paprika, salt, and black pepper.
  3. Coat the chicken breasts with most of the fajita seasoning mix, saving some for the vegetables.
  4. Place the seasoned chicken in the greased baking dish in a single layer and drizzle with olive oil.
  5. Layer the bell peppers over the seasoned chicken.
  6. Sprinkle the chopped onions over the bell peppers.
  7. Sprinkle the remaining fajita seasoning over the entire baking dish.
  8. Top the casserole with shredded mozzarella cheese.
  9. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is bubbly.
  10. Switch the oven to broil for an additional 2 minutes for a golden finish.
  11. Let the casserole rest for a few minutes and garnish with chopped cilantro before serving.
