Ingredients
  

For the Stir Fry
  • 1 lb Ground Beef can be substituted with ground turkey or chicken
  • 2 tbsp Olive Oil or avocado oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced fresh is best
  • 1 Red Bell Pepper, sliced or snap peas
  • 1 Zucchini, sliced yellow squash can be used
  • 1 cup Cherry Tomatoes, halved or sun-dried tomatoes
  • 1 tsp Dried Oregano
  • 1 tsp Ground Cumin
  • 0.5 tsp Paprika or smoked paprika
  • 0.25 tsp Red Pepper Flakes optional
  • Salt and Black Pepper to taste
  • 0.25 cup Kalamata Olives, sliced
  • 2 tbsp Fresh Parsley, chopped
  • 1 tbsp Lemon Juice
  • 0.5 cup Feta Cheese, crumbled

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 medium chopped onion and sauté for about 3-5 minutes until translucent.
  2. Stir in 2 minced garlic cloves and cook for an additional minute until aromatic.
  3. Add 1 pound of ground beef, breaking it up, and cook for 6-8 minutes until browned. Drain excess fat if needed.
  4. Incorporate 1 sliced red bell pepper and 1 sliced zucchini and sauté for about 5 minutes until slightly crunchy.
  5. Mix in 1 cup of halved cherry tomatoes, 1 teaspoon of dried oregano, 1 teaspoon of ground cumin, ½ teaspoon of paprika, and ¼ teaspoon of red pepper flakes. Season with salt and black pepper to taste. Cook for 3-4 minutes.
  6. Fold in ¼ cup of sliced Kalamata olives and 2 tablespoons of chopped fresh parsley.
  7. Remove from heat and drizzle with 1 tablespoon of fresh lemon juice, stirring gently to combine.
  8. Transfer to a serving platter and top with ½ cup of crumbled feta cheese. Serve hot.
