Preparation Steps
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine rice, chicken, enchilada sauce, beans, corn, cumin, garlic powder, salt, and pepper.
- Mix until well combined, then transfer the mixture to a greased baking dish.
- Sprinkle shredded cheese on top of the casserole.
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
- Allow to cool slightly before serving.
