  • 3 cups cooked rice
  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese Mexican blend preferred
  • 1 cup black beans
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation Steps
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine rice, chicken, enchilada sauce, beans, corn, cumin, garlic powder, salt, and pepper.
  3. Mix until well combined, then transfer the mixture to a greased baking dish.
  4. Sprinkle shredded cheese on top of the casserole.
  5. Cover with foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
  7. Allow to cool slightly before serving.
