  • 16 ounces cream cheese softened
  • 2/3 cup sugar
  • 2 large eggs
  • 1 tablespoon flour
  • 1 teaspoon vanilla
  • several drops green food coloring adjust for preferred intensity
For the Crust
  • 20 cookies OREO cookies crushed
  • 4 tablespoons butter melted
For Decoration
  • 1 cup chocolate chips melted
  • 1/4 cup edible eyes
  • 1/4 cup chocolate sprinkles
  • 1/4 cup mini chocolate chips for eyes

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and gather a mini cheesecake pan. Melt about 4 tablespoons of butter in a bowl. Crush OREO cookies until fine and mix them with the melted butter until well combined. Form the mixture into 1-inch balls and press them firmly into the bottom of each mini cheesecake pan compartment to create a solid crust.
  2. In a large mixing bowl, beat 16 ounces of softened cream cheese with 2/3 cup of sugar until smooth and creamy. Add in 2 eggs, 1 teaspoon of vanilla extract, and 1 tablespoon of flour, mixing until fully incorporated. Gradually stir in green food coloring until you reach the desired spooky shade.
  3. Pour the vibrant cheesecake batter over the crusts in the mini cheesecake pan, filling each mold nearly to the top. Place the pan in the preheated oven and bake for approximately 15 minutes or until the edges are set but the centers still slightly jiggle.
  4. Carefully remove the cooled cheesecakes from the pan. Melt 1 cup of chocolate chips in the microwave or double boiler until smooth. Dip the tops of each cheesecake into the melted chocolate to create a fun coating, then sprinkle chocolate sprinkles over the chocolate.
  5. Using remaining melted chocolate, pipe facial features onto the tops of the cheesecakes, attaching edible eyes for a playful touch.
