  • 1 can White Beans (Cannellini or navy beans) drained and rinsed
  • 2 cups Tomatoes chopped
  • 1 cup Cucumbers diced
  • 1/2 cup Red Onion finely chopped
  • 1 cup Parsley freshly chopped
  • 1/4 cup Mint fresh leaves, chopped
For the Dressing
  • 1/4 cup Lemon Juice freshly squeezed
  • 1/4 cup Extra Virgin Olive Oil
  • 2 cloves Garlic minced
  • 1 tablespoon Dijon Mustard optional
  • to taste Salt
  • to taste Black Pepper

Method
 

Step-by-Step Instructions
  1. In a small jar, combine lemon juice, olive oil, minced garlic, Dijon mustard, salt, and black pepper. Shake vigorously for about 30 seconds until blended.
  2. In a large mixing bowl, add drained white beans, chopped tomatoes, diced cucumbers, finely chopped red onion, parsley, and mint. Toss gently for 2-3 minutes.
  3. Drizzle most of the dressing over the salad mixture and toss gently for another 1-2 minutes until well coated.
  4. Transfer the salad to a serving dish. Drizzle remaining dressing on top and garnish with additional parsley or mint. Serve immediately.
