- In a small jar, combine lemon juice, olive oil, minced garlic, Dijon mustard, salt, and black pepper. Shake vigorously for about 30 seconds until blended.
- In a large mixing bowl, add drained white beans, chopped tomatoes, diced cucumbers, finely chopped red onion, parsley, and mint. Toss gently for 2-3 minutes.
