Step‑by‑Step Instructions
  1. Soak the dried glass noodles in cold water for about 5 minutes, until they soften. Drain and cut in half.
  2. Julienne the Taiwanese cabbage into thin strips.
  3. Combine light soy sauce, dark soy sauce, black vinegar, white pepper, sesame oil, sugar, and water in a bowl; whisk until smooth.
  4. Heat vegetable oil in a wok over medium heat and sauté ginger and garlic until fragrant.
  5. Add the julienned cabbage to the wok and stir-fry on high heat for about 1-2 minutes.
  6. Add dried red chilies if desired, pour in the stir-fry sauce, and add the soaked glass noodles. Toss to combine.
  7. Season with salt to taste and stir everything until heated through.
  8. Toss in chopped scallions before serving. Enjoy hot!
