  • 2 pieces Corn Tortilla fresh or store-bought
  • 1 cup Cheddar Cheese grated
  • 2 slices Deli Ham or Cooked Bacon optional for vegetarian
  • 1 tablespoon Butter for frying
For the Topping
  • 1 piece Egg can substitute with tofu for vegan
  • to taste Cilantro, Salsa, or Hot Sauce for garnish

Preparation Steps
  1. Melt 1 tablespoon of butter in a skillet over medium heat. Place a corn tortilla in the pan and warm for about 30 seconds.
  2. Sprinkle grated cheddar cheese over half of the tortilla, add layers of deli ham or bacon, fold, and press down gently.
  3. Cook the filled quesadilla for 2-3 minutes on each side until crispy and golden brown.
  4. In the same skillet, add another pat of butter, crack in the egg, and fry for 2-3 minutes until the whites are set.
  5. Cut the cooked quesadilla into quarters, place the fried egg on top, and garnish with cilantro and salsa or hot sauce.
