Preparation
  1. Begin by cutting the beef into bite-sized pieces and halving the baby potatoes. Parboil the potatoes if desired, then set aside.
  2. Heat a skillet over medium-high heat, add olive oil, and sear the beef pieces for 2-3 minutes on each side.
  3. In a mixing bowl, combine melted butter with minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper.
  4. Layer the halved baby potatoes in the slow cooker, then add the seared beef on top. Pour the garlic butter sauce and drizzle the beef broth.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is fork-tender.
  6. Let the dish rest for about 10 minutes before serving. Enjoy with crusty bread.
