Step-by-Step Instructions
- Place a large pot of salted water on high heat and bring it to a boil. Add quartered baby potatoes and cook for 12-15 minutes until fork-tender. Drain and cool slightly.
- Pat the sirloin steak dry, season with salt and pepper. In a skillet, heat olive oil over high heat. Add steak bites and sear for 2-3 minutes on each side until golden-brown. Cover with foil.
- In the same skillet, add more olive oil, then place smashed potatoes cut-side down. Cook for 4-5 minutes until golden and crispy, then flip and cook for 3-4 more minutes.
- Lower heat, add butter and minced garlic to potatoes. Sauté for about 1 minute until garlic is fragrant. Sprinkle thyme and rosemary.
- Return steak bites to the skillet and toss gently. Heat for 1-2 more minutes, adjust seasoning if necessary, and serve garnished with parsley.

Notes
Pat steak dry for better sear. Cook in a single layer and avoid overcrowding. Let steak rest after cooking. Undisturbed cooking ensures crispy potatoes.
