  • 1 lb baby potatoes Opt for Yukon Gold or Russet.
For the Garlic Butter Sauce
  • 3 tbsp butter Unsalted for better seasoning control.
  • 1 tbsp olive oil For searing the steak.
  • 4 cloves garlic, minced Fresh for better flavor.
  • 1 tsp dried thyme Fresh thyme can be used as a substitute.
  • 1 tsp dried rosemary Use sparingly if using fresh.
  • Salt and pepper To taste.
For Garnish
  • Fresh parsley, chopped Chives can be a lovely alternative.

Method
 

Step-by-Step Instructions
  1. Place a large pot of salted water on high heat and bring it to a boil. Add quartered baby potatoes and cook for 12-15 minutes until fork-tender. Drain and cool slightly.
  2. Pat the sirloin steak dry, season with salt and pepper. In a skillet, heat olive oil over high heat. Add steak bites and sear for 2-3 minutes on each side until golden-brown. Cover with foil.
  3. In the same skillet, add more olive oil, then place smashed potatoes cut-side down. Cook for 4-5 minutes until golden and crispy, then flip and cook for 3-4 more minutes.
  4. Lower heat, add butter and minced garlic to potatoes. Sauté for about 1 minute until garlic is fragrant. Sprinkle thyme and rosemary.
  5. Return steak bites to the skillet and toss gently. Heat for 1-2 more minutes, adjust seasoning if necessary, and serve garnished with parsley.
