Step-by-Step Instructions for Garlic Chipotle Lime Chicken
- In a blender, combine the tomato sauce, olive oil, garlic, canned green chiles, apple cider vinegar, lime juice, cilantro, sweetener, ground chipotle powder, sea salt, and black pepper. Blend until smooth.
- Place your boneless, skinless chicken in the slow cooker. Pour the prepared sauce evenly over the chicken. Cover and cook on high for 4-6 hours or on low for 6-8 hours.
- For the Instant Pot, place the chicken in the inner pot, pour the prepared sauce over, and add the chicken broth. Cook on the Slow Cook function for 4 hours.
- Transfer the chicken to a serving platter and set the pot to Sauté mode to simmer the remaining sauce for about 5-7 minutes to thicken.
