Method
 

Step-by-Step Instructions for Garlic Chipotle Lime Chicken
  1. In a blender, combine the tomato sauce, olive oil, garlic, canned green chiles, apple cider vinegar, lime juice, cilantro, sweetener, ground chipotle powder, sea salt, and black pepper. Blend until smooth.
  2. Place your boneless, skinless chicken in the slow cooker. Pour the prepared sauce evenly over the chicken. Cover and cook on high for 4-6 hours or on low for 6-8 hours.
  3. For the Instant Pot, place the chicken in the inner pot, pour the prepared sauce over, and add the chicken broth. Cook on the Slow Cook function for 4 hours.
  4. Transfer the chicken to a serving platter and set the pot to Sauté mode to simmer the remaining sauce for about 5-7 minutes to thicken.
  5. Slice or shred the cooked chicken and drizzle the thickened sauce over the top. Serve with cauliflower rice, low-carb tortillas, or as filling for tacos.
