  • 1 lb Ground Chicken lean and healthier alternative
  • 4 cloves Fresh Garlic minced; can substitute with garlic powder
  • 1 cup Grated Parmesan Cheese moisture and flavor; Pecorino can be swapped
  • 1 cup Breadcrumbs plain or Italian-seasoned; gluten-free option available
  • 2 large Eggs acts as a binder
  • 1 Medium Onion diced; sautéing enhances flavor
  • 2 tbsp Soy Sauce low-sodium recommended; tamari for gluten-free
  • 1 tsp Salt
  • 1 tsp Black Pepper
For Toppings
  • Additional Grated Parmesan cheese optional spices can be added

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Sauté diced onions in a skillet over medium heat for about 5 minutes until soft.
  3. In a mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, black pepper, and half the Parmesan cheese. Mix gently.
  4. Transfer the mixture to the greased baking dish and shape it into a loaf.
  5. Sprinkle the remaining Parmesan cheese on top of the meatloaf and add optional spices.
  6. Bake in the preheated oven for 45-50 minutes until internal temperature reaches 165°F (74°C).
  7. Let the meatloaf rest for 10 minutes before slicing.
