- Preheat the oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
- Sauté diced onions in a skillet over medium heat for about 5 minutes until soft.
- In a mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, black pepper, and half the Parmesan cheese. Mix gently.
- Transfer the mixture to the greased baking dish and shape it into a loaf.
- Sprinkle the remaining Parmesan cheese on top of the meatloaf and add optional spices.
- Bake in the preheated oven for 45-50 minutes until internal temperature reaches 165°F (74°C).
